About me…
I am a very active 55 year old;  I love dancing to Reggae music, yoga, weightlifting, biking, camping, hiking, music, papermaking, weaving, sewing, organic gardening, collecting vintage hats, fiber arts (batiking, sewing, rug-hooking), Kirtan music (Indian devotional chanting), Jewish
I have been working with clients for 23 years as a Personal and Private Chef, Cooking Classes, Nutrition Coaching and seminars on Health and Happiness and through Television shows on Public TV.  I am the author of 2 books; Optimum Nutrition and a cookbook, called “Optimum Nutrition- In the Kitchen with Millie Barnes”.  I presently offer a Personal Chef Service, On Site Catering, a line of luscious gluten and dairy free desserts sold at Sheff’s Everyday Gourmet on Oak St. in Riverside, weddings cakes, Nutrition Coaching and Seminars on Nutrition and It’s Link To Happiness.

 

Though my expertise is in dealing with people with food allergies, I am a well-known chef in Jacksonville, Florida.  I have been a Chef at the Wine Cellar, Mossfire Grill, I was the executive Chef at Juice ‘n Java and Heaven On Earth Café.  I had my own restaurant and have cooked for private clients for 21 years.  I have taught private cooking classes in Jacksonville and Daytona Beach, and taught cooking at Daytona Community College and in the Jacksonville Continuing Education for Adults within the Duval County School system.  I am also a Certified Food Safety Manager.

 I healed lifelong health problems through studying nutrition, and have spent the last 23 years teaching others to heal though teaching nutrition and healthy cooking.

I see that you are also a chocolate lover. How do you avoid the dairy in the chocolate? I also LOVE the stuff- but get very itchy when I eat it.

I am encouraged by your blog. as a single mama myself, I find that living simply is the key. I have recently discovered that we have a gluten intolerance, and my daughter has had dairy issues from birth on (she’s almost 8). So we’re on a brand new path of learning about these issues. Are you still local? Mossfire is one of our favorite places to eat :)
